Here's a recipe for potato cutlets, a popular Indian snack or appetizer:
Ingredients:
- 4 potatoes, boiled and mashed
- 1/2 cup bread crumbs
- 1/4 cup chopped onion
- 2 green chilies, chopped (optional)
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon ginger paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- Oil for frying
Instructions:
In a large bowl, combine the mashed potatoes, bread crumbs, chopped onion, chopped green chilies (if using), chopped cilantro, ginger paste, cumin powder, coriander powder, garam masala powder, and salt to taste. Mix well to form a dough.
Divide the dough into small portions and shape each portion into a ball. Flatten each ball into a disc or cutlet shape.
Heat oil in a deep frying pan or kadhai over medium heat.
Once the oil is hot, carefully add the cutlets to the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy.
Remove the cutlets from the pan using a slotted spoon and place them on a plate lined with paper towels to absorb any excess oil.
Serve hot with ketchup, chutney, or any other sauce of your choice.
