Here's a recipe for Panjeeri, a traditional Pakistani and Indian sweet:

Ingredients:

  1. 1 cup semolina (sooji)
  2. 1/2 cup clarified butter (ghee)
  3. 1/2 cup sugar
  4. 1/2 cup desiccated coconut
  5. 1/4 cup chopped nuts (almonds, pistachios, cashews)
  6. 1/4 cup raisins
  7. 1/4 teaspoon cardamom powder
  8. 1/4 teaspoon nutmeg powder

Instructions:

In a large pan, heat the clarified butter (ghee) over medium heat. Add the semolina and fry for 7-8 minutes, stirring constantly, or until the semolina turns light brown and fragrant.

Add the sugar to the pan and stir to combine. Fry for another 2-3 minutes.

Add the desiccated coconut, chopped nuts, and raisins to the pan. Stir to combine.

Add the cardamom powder, nutmeg powder, and fennel seeds (if using) to the pan. Stir to combine.

Fry the mixture for another 2-3 minutes, or until the nuts turn golden brown and the mixture turns fragrant.

Turn off the heat and let the panjeeri cool to room temperature.

Store the panjeeri in an airtight container at room temperature for up to 2 weeks.
