Here's a recipe for korma, a creamy and flavorful Indian dish typically made with meat or vegetables:
Ingredients:
- 1 lb boneless chicken, cubed (or your choice of meat or vegetables)
- 1/2 cup plain yogurt
- 1 onion, diced
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 4 cloves
- 4 green cardamom pods
- 2 cinnamon sticks
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (optional)
- 1/2 cup cashews, ground into a paste
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh cilantro (optional)
Instructions:
In a large bowl, mix the yogurt with the salt, turmeric powder, coriander powder, cumin powder, and red chili powder (if using). Add the cubed chicken and stir to coat. Marinate for at least 30 minutes, or overnight in the refrigerator.
In a large pot, heat the oil or ghee over medium-high heat. Add the cumin seeds, cloves, cardamom pods, cinnamon sticks, and bay leaf. Fry for a minute until fragrant.
Add the diced onion and fry until golden brown.
Add the marinated chicken (or vegetables) to the pot and fry for 2-3 minutes, stirring occasionally.
Add 1 cup of water to the pot and bring the mixture to a boil. Reduce the heat to low and cover the pot with a lid. Simmer for 20-25 minutes, or until the chicken (or vegetables) are cooked through.
Add the cashew paste to the pot and stir to combine. Cook for another 2-3 minutes.
Add the heavy cream to the pot and stir to combine. Cook for another 2-3 minutes, or until the korma reaches your desired consistency.
Turn off the heat and garnish with chopped fresh cilantro (if using).
Serve hot with naan, rice, or any other side dish of your choice.
