Here is a recipe for homemade chocolate fudge candy:

Ingredients:

  1. 2 cups granulated sugar
  2. 1 cup heavy cream
  3. 3/4 cup unsweetened cocoa powder
  4. 1/2 cup unsalted butter
  5. 1 teaspoon vanilla extract
  6. Pinch of salt
  7. 1/2 cup chopped nuts (optional)


Instructions:

Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving an overhang on two opposite sides. Set aside.

In a large saucepan, combine the sugar, heavy cream, cocoa powder, and salt. Cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture comes to a boil.

Reduce the heat to low and continue to cook, stirring occasionally, for 15 to 20 minutes or until the mixture thickens and reaches the soft ball stage (235°F to 240°F) on a candy thermometer.

Remove the saucepan from the heat and stir in the butter and vanilla extract until the butter is melted and the mixture is smooth.

If using nuts, stir them into the mixture.

Pour the mixture into the prepared baking dish and smooth the top with a spatula.

Let the fudge cool to room temperature and then refrigerate for at least 2 hours or until firm.

Use the overhang to lift the fudge out of the baking dish and onto a cutting board.

Cut the fudge into squares and serve. Store leftovers in an airtight container at room temperature for up to 2 weeks.
