Here is a basic recipe for a classic apple pie:
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1/4 to 1/2 cup ice water
- 6 cups thinly sliced peeled apples (about 6 medium)
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg yolk mixed with 1 tablespoon water (for egg wash)
- Coarse sugar (optional)
Instructions:
In a large bowl, whisk together the flour, salt, and sugar. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Add ice water, 1 tablespoon at a time, and mix until the dough comes together into a ball.
Divide the dough in half and flatten each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 375°F (190°C).
In a large bowl, mix together the sliced apples, sugar, cinnamon, and nutmeg until well combined.
On a lightly floured surface, roll out one of the dough disks into a circle about 12 inches in diameter. Place the dough into a 9-inch pie dish.
Pour the apple mixture into the prepared pie dish and dot with the butter.
Roll out the second dough disk into a circle about 12 inches in diameter. Cut into strips about 1/2 inch wide.
Place the strips over the apple mixture in a lattice pattern.
Brush the lattice with egg wash and sprinkle with coarse sugar (if desired).
Bake for 45 to 50 minutes, until the crust is golden brown and the filling is bubbling.
Let the pie cool for at least 30 minutes before slicing and serving.
