Saag Paneer is a delicious North Indian dish that consists of paneer (a type of Indian cheese) cooked in a spinach-based curry. Here's a recipe to make it at home:

Ingredients:

  1. 400g paneer
  2. 2 bunches of spinach (or 500g frozen spinach)
  3. 1 onion, chopped
  4. 2 garlic cloves, chopped
  5. 1 inch ginger, grated
  6. 2 tomatoes, chopped
  7. 2 green chillies, chopped
  8. 1 tsp cumin seeds
  9. 1 tsp coriander powder
  10. 1 tsp garam masala
  11. 1 tsp turmeric powder
  12. 1 tsp red chilli powder
  13. Salt, to taste
  14. 2 tbsp oil
  15. 2 tbsp butter
  16. 2 tbsp cream (optional)


Instructions:

If using fresh spinach, wash it thoroughly and blanch it in boiling water for 2-3 minutes. Drain the spinach and transfer it to a blender. Blend until smooth. If using frozen spinach, thaw it and blend it until smooth.

Heat oil in a pan and add cumin seeds. When the cumin seeds start to crackle, add chopped onions, garlic and ginger. Saute until the onions turn translucent.

Add chopped tomatoes and green chillies. Cook until the tomatoes turn soft and mushy.

Add coriander powder, garam masala, turmeric powder, red chilli powder and salt. Mix well and cook for a minute.

Add the spinach puree and cook for 5-7 minutes until the spinach is cooked and the curry thickens.

Cut paneer into small cubes and fry them in butter until they turn golden brown. Add the paneer cubes to the spinach curry and mix well.

Optional step: Add cream to the curry and mix well. Simmer for a minute or two.

Serve hot with roti, naan or rice.
