Ingredients:
- 1 cup Semolina (Sooji)
- 1/4 cup All-Purpose Flour (Maida)
- 1/4 tsp Baking Soda
- Salt to taste
- Oil for deep frying
- 1/2 cup boiled and mashed Potatoes
- 1/4 cup boiled and mashed Black Chickpeas
- 1/4 cup chopped Onion
- 1/4 cup chopped Tomato
- 2 tbsp chopped Coriander Leaves
- 1 tsp Roasted Cumin Powder
- 1 tsp Chaat Masala
- 1/2 tsp Red Chilli Powder
- Salt to taste
- Tamarind Chutney
- Mint-Coriander Chutney
- Jaljeera Water
Instructions:
In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Mix well.
Add enough water to make a stiff dough. Cover and keep aside for 10 minutes.
Knead the dough again and make small balls from it.
Roll out each ball into a thin puri, using a rolling pin.
Heat oil in a deep frying pan over medium heat.
Deep fry the puris in hot oil till they are crispy and golden brown.
Drain the puris on a paper towel to remove excess oil.
In a mixing bowl, mix mashed potatoes, black chickpeas, chopped onion, chopped tomato, coriander leaves, roasted cumin powder, chaat masala, red chilli powder, and salt.
Add some water to jaljeera powder to make a jaljeera water.
Take each puri and make a small hole on the top using a spoon.
Fill the puri with the potato mixture.
Add some tamarind chutney and mint-coriander chutney as per your taste.
Finally, fill the puri with jaljeera water and serve immediately.
