Ingredients:
For the soup:
- 500g chicken breast, boiled and shredded
- 6 cups chicken stock or water
- 1 can (14 oz) coconut milk
- 1 tbsp ginger-garlic paste
- 2 tbsp red curry paste
- 1 tbsp turmeric powder
- Salt to taste
- 1 tbsp oil
For the toppings:
- 200g egg noodles, boiled
- 1/4 cup fried onions
- 1/4 cup chopped fresh coriander leaves
- 1/4 cup chopped fresh mint leaves
- 2 green onions, sliced
- 2 limes, cut into wedges
- 1/2 cup roasted peanuts, chopped
- 1/2 cup fried garlic, chopped
- 1/4 cup chili oil or chili flakes (optional)
Instructions:
In a large pot, heat oil over medium heat.
Add ginger-garlic paste and fry for 1-2 minutes.
Add red curry paste and turmeric powder. Mix well.
Add chicken stock or water and bring to a boil.
Add shredded chicken and coconut milk. Mix well.
Simmer for 15-20 minutes, stirring occasionally.
Add salt to taste.
To serve, place boiled egg noodles in a bowl.
