There are many variations of Chinese rice, but here is a simple recipe for making Chinese fried rice:
Ingredients:
- 2 cups of cooked white rice, preferably refrigerated overnight
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1/2 cup of frozen mixed vegetables (carrots, peas, and corn)
- 2 eggs, lightly beaten
- 2 tablespoons of soy sauce
- 1/4 teaspoon of sesame oil
- Salt and pepper, to taste
- Optional toppings: green onions, sesame seeds
- Instructions:
Heat a wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.
Add the minced garlic and stir-fry for about 30 seconds, until fragrant.
Add the frozen mixed vegetables and stir-fry for 1-2 minutes until they are thawed and heated through.
Push the vegetables to one side of the pan and pour the lightly beaten eggs onto the empty side. Scramble the eggs for about 1-2 minutes until they are cooked through.
Add the cooked rice to the pan and stir-fry for 2-3 minutes until the rice is heated through and slightly crispy.
Drizzle the soy sauce and sesame oil over the rice and stir to combine. Season with salt and pepper to taste.
Optional: garnish with chopped green onions and sesame seeds before serving.
