Here's a recipe for vegetable pakoras, a popular fried snack from South Asia:
Ingredients:
- 1 cup of chickpea flour (besan)
- 1/2 tsp of carom seeds (ajwain)
- 1/2 tsp of cumin seeds (jeera)
- 1/2 tsp of red chili powder
- 1/4 tsp of turmeric powder
- Salt to taste
- 1/2 cup of water
- 2 cups of mixed vegetables (such as onion, potato, cauliflower, spinach), chopped
- Oil for frying
Instructions:
In a mixing bowl, combine the chickpea flour, carom seeds, cumin seeds, red chili powder, turmeric powder, and salt. Mix well.
Gradually add water to the bowl while stirring continuously to form a smooth, thick batter.
Add the chopped vegetables to the batter and mix well until they are coated evenly.
Heat the oil in a deep frying pan over medium-high heat.
Drop spoonfuls of the vegetable mixture into the hot oil and fry until the pakoras turn golden brown and crispy on all sides.
Remove the pakoras from the oil using a slotted spoon and drain excess oil on a paper towel.
Serve the hot pakoras with mint chutney or ketchup and enjoy!
Note: You can experiment with different vegetables and spices to make different varieties of pakoras.
