Ingredients:
- 1 kg carrots, grated
- 1 liter whole milk
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup chopped nuts (almonds, cashews, pistachios)
- 1/2 tsp cardamom powder
- 1/4 tsp saffron strands (optional)
Instructions:
Heat the ghee in a heavy-bottomed pan or kadhai over medium heat.
Add the grated carrots and sauté for 10-12 minutes, stirring frequently, until the carrots soften and the raw smell disappears.
Add the milk to the pan and stir well.
Cook the mixture over medium heat, stirring occasionally, until the milk reduces to about half and thickens.
Add the sugar, cardamom powder, and saffron strands (if using) to the pan and stir well.
Continue to cook the mixture over medium heat, stirring frequently, until the sugar dissolves and the gajrela thickens to a creamy consistency.
Add the chopped nuts to the pan and mix well.
Cook the gajrela for a few more minutes, until it reaches the desired consistency.
Remove from heat and let the gajrela cool to room temperature.
Serve the gajrela garnished with more chopped nuts.
