Here's a recipe for urad dal, a popular lentil dish in Indian cuisine:

Ingredients:

  1. 1 cup split urad dal (black lentils)
  2. 3 cups water
  3. 1 onion, finely chopped
  4. 1 tomato, finely chopped
  5. 1 green chili, finely chopped (optional)
  6. 2 cloves garlic, minced
  7. 1 teaspoon grated ginger
  8. 1/2 teaspoon cumin seeds
  9. 1/2 teaspoon coriander powder
  10. 1/2 teaspoon turmeric powder
  11. Salt to taste
  12. 2 tablespoons oil
  13. 1/4 cup chopped fresh cilantro


Instructions:

Rinse the urad dal in cold water and soak in water for at least 2 hours, or overnight.

Drain the soaked urad dal and transfer to a pressure cooker with 3 cups of fresh water. Cook on high heat for 3-4 whistles, or until the lentils are soft and cooked through.

Once the pressure has released, open the pressure cooker and mash the urad dal lightly with a spoon.

In a separate pan, heat the oil over medium heat. Add the cumin seeds and fry for a few seconds until fragrant.

Add the chopped onion to the pan and fry until golden brown.

Add the minced garlic, grated ginger, and chopped green chili (if using) to the pan. Fry for another minute.

Add the chopped tomato to the pan and stir to combine. Cook for 2-3 minutes.

Add the coriander powder, turmeric powder, and salt to taste to the pan. Stir to combine.

Add the mashed urad dal to the pan and stir to combine. Cook for 5-7 minutes, or until the mixture thickens.

Garnish with chopped fresh cilantro and serve hot with rice or any other side dish of your choice.
