Chicken karahi is a flavorful and spicy Pakistani dish made with chicken, tomatoes, and a combination of spices. Here is a recipe for making chicken karahi:

Ingredients:

  1. 1 kg chicken, cut into pieces
  2. 3-4 medium-sized tomatoes, chopped
  3. 1 large onion, chopped
  4. 2-3 green chilies, sliced
  5. 1 tbsp. ginger paste
  6. 1 tbsp. garlic paste
  7. 1 tsp. cumin seeds
  8. 1 tsp. coriander seeds
  9. 1 tsp. red chili powder
  10. 1 tsp. turmeric powder
  11. 1 tsp. gram masala powder
  12. Salt to taste
  13. 1/4 cup oil
  14. Fresh coriander leaves, chopped for garnish



Instructions:


In a large wok or karahi, heat oil on medium heat.

Add cumin and coriander seeds and fry for a few seconds until they start to sizzle.

Add the chopped onions and fry until they become golden brown.

Add ginger and garlic paste and fry for a minute until the raw smell disappears.

Add chopped tomatoes and green chilies and cook until the tomatoes become soft and mushy.

Add chicken pieces to the wok and fry for a few minutes until the chicken changes color.

Add the spices (red chili powder, turmeric powder, garam masala powder, and salt) and stir well to combine.

Cover the wok and cook on medium-low heat for 20-25 minutes or until the chicken is cooked through.

Once the chicken is cooked, increase the heat to high and stir-fry for 2-3 minutes to dry out any excess water and thicken the gravy.

Garnish with chopped coriander leaves and serve hot with naan or roti.

Note: You can adjust the level of spiciness by adding or reducing the amount of green chilies and red chili powder. Additionally, you can also add a pinch of kasuri methi (dried fenugreek leaves) to give the dish a unique flavor.
